Blueberry pancakes


Yes, we have been eating a lot of blueberries around here. The girls love them and can't get enough. This morning we made blueberry pancakes, which turned out so good! It's the first Saturday in awhile that we didn't have anything planned and were able to relax a bit and enjoy being together as a family. Life is slowing down a bit, after a few very busy months for us. I am so enjoying it! Anyway, I included the recipe at the end that we use for pancakes. It's a family favorite! It does require that you soak your flour overnight, but it is so worth it as it makes very yummy pancakes. Enjoy your weekend!

Pancakes

2 cups whole wheat flour
2 cups buttermilk or yogurt
2 eggs, lightly beaten
1/2 tsp. sea salt
1 tsp. baking soda
2 Tbs. melted butter
few shakes of cinnamon (optional)
dash of vanilla extract (optional)

Soak flour in buttermilk or yogurt overnight, for 12 or so hours. Stir in remaining ingredients and thin to desired consistency with water. Cook on hot, oiled griddle. These pancakes cook a little more slowly than other pancakes. Serve with maple syrup or honey.

To make blueberry pancakes (or even sometimes raisen) drop the berries on the pancakes right after pouring the batter on the pan.
